I n the hills and valleys of Lancashire there lies many a secret. Food provenance is in abundance from the cheeses of Beacon Fell to the shrimps of Morecambe Bay, to the fruit and vegetables of Hesketh Bank and Lonkshire Lambs, the indigenous breed of Lancashire in the hills of Pendle and Bowland.
We are fortunate in Lancashire that we also
have a great many pubs and inns serving regional food and drinks, boasting roaring log fires. Many of these pubs and inns are in stunning locations where the combination of food and drink can’t be bettered. I am heavily influenced by the beauty of the land and the special food produced therein. Producers and suppliers such as Peter Ascroft (cauliflowers), Banks Tomatoes, amazing cheeses, Kirkhams, Butlers, Leagrams and many more. Black puddings from Haslingden, the wonderful Lonk Lamb from the hills of Pendle and Bowland, and beef from the valleys to the north western shores with seasonal salmon and bass aplenty; and Morecambe Bay shrimps to top it all off.
