Douglas Fir Sour by Aven Restaurant

INGREDIENTS METHOD

Douglas Fir Gin • 100ml gin • 20g Douglas Fir Needles

1. To a blender add the gin and needles and blend into completely infused. 2. Pass through Muslin to remove all the pieces of Douglas fir. 3. This can be kept in the freezer where it will keep its bright green colour.

Douglas Fir Sour • 75ml Douglas Fir Gin

1. Add all the ingredients to a shaker. 2. Shake without ice until foamy 3. Add ice and shake a second time to create a creamy texture 4. Strain into a chilled martini glass.

• 1 lime juice • 1 egg white • 25ml sugar syrup
