Grandma Nan’s Parkin by The HAPPA Cafe

INGREDIENTS

• 675g Plain Flour • 30g Ground Ginger • 15g Mixed Spice • 15g Bicarbonate Soda • 175g Dark Brown Sugar • 350g Margarine • 675g Golden Syrup

METHOD

1. Preheat oven to 150°c 2. Grease and line a 30cm x 20cm deep baking tray 3. Sift together all the dry ingredients into a large mixing bowl 4. Gently heat together the syrup, margarine and sugar until the sugar dissolves 5. Fold the flour mixture into the sugar mixture ensuring to mix well 6. Beat the eggs and milk together and fold into the cake mix 7. Pour into your prepared tin and bake for 40mins until well risen and firm 8. Cool and cut into 15 squares, serve with lashings of butter
